Meatloaf muffins are now my favorite easy weekday meal.
Mix, bake, eat!
Can't get better than that.

This is her recipe, except I used ground turkey instead of hamburger.
Saute 1/2 onion and 1 clove of garlic in 1 T. of butter for 5 minutes.
Mix onion-garlic mixture with 1 lb. of ground turkey.
Mix 1 egg, 1/2 c. ketchup, 1/2 c. milk, 12 crushed Ritz crackers, 3 green onions, 1/2 t. Worcestershire sauce, 1 t. salt, 1 t. pepper with turkey mixture.
Spoon the mixture equally into an ungreased muffin pan.
Mix 1/2 c. ketchup and 4 T. brown sugar together. Spoon equally onto meatloaf mixture in muffin pan.
Bake for 30 minutes or until done and enjoy!
